<p>Preheat oven to 375&#8242;  Line twelve 2 1/2-inch muffin cups with paper bake cups.  For topping in a small bowl stir together 1/4 cup flour and 2 tablespoons granulated sugar and 2 tablespoons brown sugar.  With a fork mix 2 tablespoons softened butter until mixture resembles coarse crumbles.</p>
<p>In a  medium bowl stir together 2 cups flour, 1/2 cup granulated sugar, 1/3 cup packed brown sugar, 1 1/2 teaspoons baking soda, 1/4 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg.  Use a fork or lightly mix in 1/2 cup butter until mixture resembles coarse crumbs.  Make a hole in the center for following liquid.</p>
<p>In a small bowl beat 1 egg with a fork; stir in 1 cup mashed bananas and 1/3 cup milk.  Add egg mixture <img class="wp-image-86 alignleft" title="Banana crunch muffin" src="http://www.hillarybickford.com/wp-content/uploads/2012/03/banana-crumb-muffin-300x225.jpg" alt="" width="240" height="180" />to flour mixture all at once; stir until moistened, batter will be lumpy.  Spoon batter into muffin cups, filling 3/4 full.  Sprinkle topping evenly over batter.</p>
<p>Bake for about 18 minutes or until golden and toothpick comes out clean.  Enjoy warm!</p>

It&#8217;s great because it&#8217;s tasty and super easy. Simply spread 1 can of re fried beans into the bottom of a 9&#215;9 pan, or the equivalent serving platter. Layer 2 cups shredded cheddar cheese on top of the beans. Sprinkle 1 lb of cooked and chilled ground beef or ground chicken over the cheese. The trick here is to use a taco seasoning packet on the ground meat while you cook it. After that spread 1 cup sour cream on top of the meat. Then pour 1 cup salsa over the sour cream and sprinkle another cup of cheddar cheese on top. I like to add diced olives, tomatoes, onions and green peppers for color. Server with tortilla chips and you&#8217;re ready to party!</p>
